Am I tossing away any benefits, of the latest kernel, if I use the 4.8x/9x
kernel. Or do the benefits of the 5.1x kernel out weigh any instability?

I heard 4.19 will be next LST and I've been using this since couple of
months already. I must admit, that it is very good and I will be staying on
it when upgrading to Buster.
You upgrade if you need to upgrade, no one is forcing you to do so.
