..and, of course NONE of this resembles anything I remember from
hacking my Ubuntu 16.04 with Trinity from a WAY LONG time ago.
Could someone please point me where to start?

Trinity LiveCD on Ubuntu 18.04 has been configured to work with the TDE
NetworkManager applet. NetworkManager did not seem to need netplan to
work, so there are no /etc/netplan. You can try to set a static address
using TDE NetworkManager - the icon at the bottom right.
