Okay. As far as I can see, the Trinity website only shows the
first of these repos; I was not aware of the other two. It's not
clear to me if r14.0.x is as stable as "stable"? :-)

R14.0.x is the next stable and will become R14.0.6 at some point. You
can take is as "quite to very" stable :-) R14.1.x will become the
next R14.1.0 (some time next year) and is usually quite stable as
well, although less than R14.0.x since more development is involved.

Would it be safe to pull only certain components (e.g. Konqueror,
Kpdf, Kate) from the R14.1.x repo, without upgrading everything?

That does not seem to be a good idea. Between R14.0.x and R14.1.x there
may be changes in API as well as ABI. This could be a cause for trouble.
If you want a stable system and also new fixes, the r14.0.x repository is
the right way.
