I looked at Trinity Control Centre (which is where I expected to find
something labelled "Environment Variables", or something similar) but I
don't
see anything like that there.

The usual suspects are:
.profile
.bashrc
These are read when TDE sets up the session, so when you change them and do not use bash
to start the programs you'll need to restart the current TDE session.
