Okay, I've upgraded to R14.1.2. Was it intentional that all of my Appearance and Themes (Colors, Fonts, etc.) be reset from my preferred settings?

It didn't happen with me, and I upgraded only a couple days ago. However, I am running Devuan Daedalus, so it's not quite an exact comparison.
Maybe some others out there are running something closer to your own machine?

Didn't see this here, but I am on PSB.

For Colors, fortunately I had saved my changes from the default to "Leslie," but there's no option for doing that in the rest of the settings.

All former settings re-established. I did have an incident where Control Center => Desktop => Panels, Appearance tab => Advanced Options dialog locked up, then crashed Control Center after replying to the "not responding" dialog with Terminate. I completed the panel reconfiguration with the panel context menu instead.
(Sorry for the useless Subject on this thread; I'm still getting used to Bill's template method.)
